What is Pepper Mash?

Want to know the hot secret behind your favorite hot sauce?  Pepper mash!  Pepper mash is the base product that all hot sauce is based off of, and if you’ve ever wanted to give do-it-yourself hot sauce a try, pepper mash is a must.

Want to give it a whirl?  We’re here to help.  Here’s a basic recipe for pepper mash.

Ingredients/Supplies for Making Pepper Mash

  • Approximately 2 dozen hot peppers.  The peppers must be of the hot variety: try habanera, cayenne, or Thai chili. You can make hot sauces from milder peppers, depending on our heat level preference. See ChiliPepperMadness.com for more on your choice of chili peppers.
  • Kosher salt
  • Latex gloves
  • Food processor (a knife will work if you don’t have a processor, but it will take longer)
  • Mason jars
  • Large metal pot

Put gloves on before handling peppers – this will prevent you from accidentally transferring chili juice from your fingers to mucus membranes, which could cause harm.  Rinse peppers, dust with kosher salt, slice in half.  Remove seeds and pulp.  Rinse for a second time. Process in food processor (or slice) until very fine, but don’t turn them into a paste.  Place processed peppers into a mason jar with an additional tablespoon of salt per pint of peppers.

Close mason jars.  Place sealed jars into metal pot, fill with water until water level reaches halfway up the jars.  Boil for at least 20 minutes.  This seals the jars and keeps bacteria from growing in your mash – don’t skip it!

Now, the waiting.  You must age your pepper mash for at least one month, though most hot sauce aficionados say that six is preferred.  You know the iconic Tabasco Sauce brand?  They age their mash for three years!

Once your mash is done aging, you can create your hot sauce by adding a combination of vinegar, tequila, cumin, salt, lime, garlic, cilantro, anything you desire!  Go wild and perfect your own hot sauce recipe – you might be harboring the next million-dollar hot sauce recipe in your head!
